The Valpolicella Blend is based on three native red wine varieties grown in the Veneto region of northeastern Italy:
- Corvina
- Rondinella
- Molinara
The production method is equally important - the three varieties are semi-dried to make Amarone, arguably the most famous incarnation.
After harvesting, the grapes are dried on wooden racks and stored in well-ventilated areas for about 120 days. After winemaking, the must macerates the skins for seven to eight days at a low temperature. A laborious fermentation process follows, lasting four to six weeks, and the wine matures in 792-gallon oak barrels for two years, then six additional months in the bottle before being marketed.
