Tasting characteristics: The Thalassitis Cellar Aged is the aged version of THALASSITIS, fully expressing the quality potential of the traditional white variety of Santorini, Assyrtiko. For its creation, only Assyrtiko from the ancient vineyards of Episkopi, Akrotiri, and Pyrgos, approximately 80 years old, with particularly low yield per hectare, are selected. The soil and the variety combined with its distinct winemaking process give a wine with strong personality, long-lasting taste, and tension. Through the aging process, the most expressive and complex Thalassitis Cellar Aged is born, with a golden color and tertiary aromatic and tasting characteristics, yet retaining its high acidity and impressive freshness.

  • It favors flavors of moderate aromatic intensity, where salty, sour, or fatty dominate.
  • Pour it into a wide decanter about half an hour before enjoying it.

    Truly, this is a different wine, I would say shock and awe. I would place it closer to Ammonite in taste and aromas rather than the regular Thalassitis. Assyrtiko lovers definitely have to try it
