Harvest from late August to early September. Winemaking according to the traditional method of fortified sweet wine, interrupting alcoholic fermentation by adding wine alcohol.
The sweetness of Mavrodaphne wine is exclusively due to the grapes' sugars, while its bouquet combines the aromas of the grapes with those of partial fermentation and aging.
Aging since 1979 in oak barrels.
It is notable that even today in the cellar of Achaia Clauss, the first Mavrodaphne vinified by Clauss, vintage 1873, rests! It is the oldest Greek wine and one of the oldest in Europe.
