TYPE OF WINE: ROSÉ DRY
CATEGORY: P.G.I. MACEDONIA
VINTAGE: 2022
VARIETAL COMPOSITION: Xinomavro 100%
VINIFICATION: Rosé produced by the Saignée method or bleeding of the must after approximately 12 hours of contact with the skins, adopting the Provence style in terms of color. Alcoholic fermentation at a low temperature to preserve floral aromas. After alcoholic fermentation, the wine's complexity is enhanced by stirring the lees at regular intervals for several days.
ANALYTICAL DATA:
- Alcohol: 12.1%
- PH: 3.20
- Total acidity: 7.9 (tartaric acid)
- Residual sugar: 2.1
TASTING CHARACTERISTICS: Onion skin color with orange highlights. On the nose, it primarily exhibits a floral character but also aromas of red fruits reminiscent of cherry and raspberry. In the mouth, it is explosive, with refreshing acidity, medium body, and a fresh fruit aftertaste.
SERVING RECOMMENDATIONS: Served at 8-10°C, accompanying a wide range of dishes with a particular affinity for traditional Greek cuisine such as stuffed vegetables, green beans, and oily dishes. It pairs excellently with grilled vegetables and more intense types of fish but is highlighted next to dishes with an umami flavor profile, where the acidity and flavor intensity of the rosé match perfectly with that of the food.
