Aidani: One of the rare indigenous varieties of Santorini, less known than Assyrtiko. The grapes come from vineyards in the areas of Pyrgos, Megalochori, and Akrotiri in Santorini. The harvest was done by hand, and the grapes were kept in a cooling chamber for 12 hours before pressing. The destemmed grapes underwent 12 hours of cold maceration. Fermentation was carried out with indigenous yeasts and controlled temperature, lasting a month. The wine matured with the lees for 6 months and was bottled unfiltered.
