The harvest was done by hand and the grapes were kept in a cooling chamber for 12 hours before pressing. A 12-hour cold extraction was carried out on the destemmed grapes. Fermentation took place with indigenous yeasts and controlled temperature of 17-18°C lasting 45 days. The wine matured with the lees for 6 months and was bottled unfiltered.
Can age for more than 5 years.
