The dry white wine Pavlidis Estate Thema combines Sauvignon Blanc and Assyrtiko. It has a pale yellow-green color and a complex nose with aromas of exotic fruit, citron and peach, along with herbal notes and minerality that develops over time. On the palate, it has lively acidity and freshness with a full body. The finish is intensely fruity, with aromas of peach and grapefruit and a lingering hint of lemon.
Winemaking involves gentle pressing and fermentation under controlled conditions. The wine matures for 3 months in a stainless steel tank on its fine lees. It pairs with fish and seafood, pasta and pizza, white meats and poultry, herb salads, and Asian and spicy dishes. It can also be served as an aperitif.
