Gerovassiliou Estate Chardonnay is a dry white wine made from Chardonnay grapes, grown on the estate in Epanomi, Thessaloniki, since 1983. After pre-fermentation cold maceration, it is fermented in French oak barrels and remains in contact with its lees for several months. It has an intense golden-yellow color and aromas of honey, vanilla, ripe citrus fruits, nuts, and subtle smoke.
It is full-bodied and rich on the palate, with a creamy texture and balanced acidity, while the finish reveals notes of oak, vanilla, and ripe fruit. It has aging potential and pairs well with oily or smoked fish, fish with white sauce, mollusks, shellfish, and caviar.
