Kyr-Yianni's dry white wine made from the Assyrtiko grape variety is produced using the Solera method, which combines the wine's character with the freshness of subsequent vintages. Fermentation takes place in stainless steel tanks, followed by four months of ageing on the lees.
It then matures for seven years in French oak barrels, topped up each year with Assyrtiko from newer vintages. It pairs well with white meats and poultry, fish and seafood, Asian and spicy cuisine, vegetables and legumes. It can also be served as an aperitif.
