Can I have potato salad as a main meal?

Make the next nutritious salad that you will enjoy as lunch at the office. It is a complete (main) meal since it contains carbohydrates, proteins and fats.  

The potatoes are a source of carbohydrates and are characterized by high potassium content! At the same time, the salad contains sources of high biological value protein such as egg and yogurt.  Finally, the salad is rich in color, aromas and requires ingredients that you certainly have at home.

Can I have potato salad as a main meal?

Ingredients for 1 serving

  • 2 small fist-sized potatoes (200g)
  • 1 medium carrot (100g)
  • ¼ onion, finely chopped
  • 3-4 sprigs of dill, finely chopped
  • 1 egg
  • 60g cheese < 18% fat, cut into cubes
  • 1 tbsp olive slices

For the sauce

Steps 

  1. Peel the potatoes and the carrot with a peeler
  2. Cut the potatoes into 3 pieces and the carrot into 4 pieces. 
  3. In a small saucepan, add the potatoes and the carrot and boil until they soften. 
  4. Meanwhile, boil 1 medium egg very well in a briki, then peel it. 
  5. For the sauce, add all the ingredients to 1 bowl and mix very well until it has a smooth texture. 
  6. Then, in a salad bowl, add the potatoes, the carrot, the onion, the dill, the egg cut into 4 pieces, the cheese, and the olive slices. 
  7. Mix the ingredients and drizzle with the cool sauce. 
  8. Serve and enjoy!
