Description

The philosophy of Lustau has remained the same since its establishment in 1896: the pursuit of the highest quality in order to offer the market the broadest and best range of sherry. In recent years, Lustau has been honored and recognized with many awards, including the title of "Best Spanish Producer" in 2011 at the International Wine and Spirit Competition in London.

Sherry is a fortified or "encabezado" wine in the terminology of the wineries of Jerez. This means that additional alcohol is added to these wines to facilitate their extensive aging process in American oak barrels. The wines are classified according to their age as Finos and Manzanillas with a total alcohol content of 15º, while the wines classified as Olorosos have a minimum alcohol content of 17º.

  • BIOLOGICAL AGING: By storing the wine at 15º, a layer of yeast (flor) forms that protects the wine from oxidation.
  • OXIDATIVE AGING: With an alcohol content above 17º, biological activity is impossible and the wine will begin the oxidation process without the protection of the "flor".
