Dosage: 5,000 grams mix, 5,000 grams 70% strong flour, 6,000 - 6,500 grams ice-cold water, and 200 grams yeast.
Instructions: Knead all ingredients in a spiral mixer for 10' at slow speed and 5' at fast speed. Rest for about 15'. Proof for about 45' at 33°C with 70% relative humidity. Bake with steam at 190°C - 210°C for about 55'.
