Quinoa had great nutritional significance for the pre-Columbian cultures of the Andes, as it was the second main food after the potato. Today, it is highly valued for its nutritional content and has been classified by the United Nations as a superfood, as it contains a high concentration of protein (13%).

Unlike rice and wheat, quinoa contains a balanced content of essential amino acids, making it a complete type of nutrition. This balance means that less quinoa is required to meet dietary needs compared to wheat. Although considered a seed, quinoa is classified as a whole grain and is a good source of dietary fiber.

Additionally, quinoa contains Omega-3 fatty acids that are beneficial for the heart. It is also a good source of phosphorus, magnesium, and iron. It is gluten-free and easily digestible.
