The history of the Winery has its roots in 1952 and the shift towards modern, quality production began in 2004. The first and most important goal was the renewal of old vineyards and the planting of new ones. They were replanted with Assyrtiko as well as rare varieties of Santorini, such as Aidani and Mavrotragano.
The modern approach to work in the vineyard, the most important part of wine production, resulted in the creation of a modern winery that wins significant awards.
PDO Santorini. Assyrtiko 85% and 15% Aidani.
Old selected vines averaging 100 years old, from the vineyards in the villages of Pyrgos, Megalochori, Exo Gonia, and Akrotiri. The traditional sun-drying of the grapes lasts 9-14 days under the Santorini sun, in order to dehydrate the grapes and concentrate sugars, acidity, and flavors.
This is followed by fermentation in tanks which lasts several days and stops spontaneously, leaving a significant amount of unfermented sugars. The maturation takes place in old French barrels of 225 and 500 liters for at least 90 months.
