It is a pure Oolong, with fermentation close to green tea. Unlike other oolongs, its infusion is more yellowish and its taste is light, with a fragrance reminiscent of orchid. Ti Kuan Yin (Guanyin) is the name of the Buddhist deity of Mercy, whom we encounter in many Buddhist Temples. This tea got its name because it is said that its leaves become dark and heavy like iron, while its quality remains "pure" and lovely like the deity.
