Seitan, also known as wheat meat, is a traditional Asian food made exclusively from wheat gluten. Its production involves removing the starch from wheat flour by washing, leaving behind the protein mass (gluten). This is then cooked, often in a broth made from kombu seaweed and soy sauce, to achieve its characteristic texture and flavor.
