Paprika is the spice that comes from the air-drying of the fruits of the Capsicum family. It originates from central Mexico and was introduced to Spain in the 16th century under the name "pimenton".

Its heat is due to the concentrations of capsaicin found in certain types of peppers, influenced by factors such as temperature increase, exposure to sunlight, humidity, and soil chemistry.
