THE WINE: Bottled in early March, the wine expresses freshness and crispness.
TERROIR: The soils are located between Wintzenheim and Turckheim and consist mainly of sand, gravel, clay, and slate. From this vineyard come wines that are soft and easy to drink.
WINEMAKING: The grapes were handpicked and slowly pressed in gentle pneumatic presses for 5-8 hours to yield a clean juice and a beneficial amount of skin contact. The juice was then transferred to temperature-controlled stainless steel tanks, where it underwent a natural fermentation using only its own natural yeast that lasted for a month. Fermentation initially occurred at controlled temperatures, but eventually was allowed to proceed at its own pace to enable the wine to develop its own character and complexity. The wine was naturally stabilized in stainless steel tanks during the winter months and, after a very gentle filtration, was bottled in March before the summer heat to preserve the natural carbonation (a natural antioxidant).
