This Barolo holds special value for Scavino and represents the history and tradition of blending different Barolo crus. The Barolo comes from the best sites of the seven crus. The variety of soils, exposure, and altitude characterize each of these small but very important terroirs. By uniting these varieties, the Barolo offers harmony and complexity and the representative character of the region.
Distinct winemaking, separation of pomace, and gentle crushing. The maceration and alcoholic fermentation take place in stainless steel with controlled temperature and indigenous yeasts. Malolactic fermentation occurs in oak barrels. The stabilization of the tartar is done naturally during winter with the low temperatures.
The wine from each cru is kept separately and ages in neutral French oak barrels for 10 months and an additional 12 months in large barrels. The final blend is the result of further selection in the cellar of the most successful harvest points. It ages for one year in stainless steel and 10 months in the bottle before release.
