Produced from Sideritis grapes that mature slowly in November. The selection of grapes for distillation is different from wine grapes. For distillation, unripe grapes with high acidity and low sugars are used. This results in very clean fermentations in aromas. The product produced has very subtle secondary aromas, which contributes to the creation of an exquisite distillate. Distillation takes place in alembics with a single distillation, where the first (heads), the last (tails), and the heart remain, which ages for twelve years in new French Limousin oak barrels. During the aging process, the complex character of the product is highlighted.
