The Usuba cutter from Ambrogio Sanelli is ideal for cutting herbs and vegetables. The blades are made from specially modified NITRO-B stainless steel (X50CrMoVN15 / AISI440B), where the addition of nitrogen particles significantly improves corrosion resistance and hardness after heat treatment. The hardness of the knife is 57-58 HRC. According to Japanese technique, the knives are sharpened on one side, allowing the food to come into contact with the blade only for a short period, minimizing friction. The ergonomic, balanced, and comfortable riveted handles are made from synthetic resin POM. Do not wash in dishwashers.
