The Palivos Estate has been following modern winery directives since 1995. The vineyards extend across various areas of Ancient Nemea, with the most privileged one located at an altitude of 420 meters. The northern winds on the hillside slopes contribute to the proper ripening of the grapes. The vineyard is part of organic farming, with soils of low fertility that lead to high-quality grapes.

  • Various types of soil: calcareous, loamy, clayey, gravelly, and sandy.
  • High complexity from the unique combination of microclimate and topography.
  • Cabernet Sauvignon & Syrah.
  • Slow harvest 1 month after theoretical ripening.
  • Cold extraction for 3 days at 8 ℃.
  • Co-residence of pomace with the juice for 1 month with frequent stirrings.
  • Aging for 12 months in new French oak barrels and 6-8 months in the bottle.
