The pastry mix for Constantinopolitan tsoureki is enriched with mastic and mahleb aromas, offering a traditional result with excellent texture. Its fluffy and elastic consistency ensures perfect rising and a pronounced braid.

Dosage:
- 1,000 grams of mix
- 1,000 grams strong flour
- 300 - 330 grams cold water
- 100 grams yeast (for sweet doughs)
Instructions:
- Place the mix and yeast in the mixer to combine with the spiral for a few turns.
- Add the water gradually, 5 minutes on slow speed and 12 minutes on fast.
- The dough's exit temperature should be 27°C.
- Rest the dough in a ball for about 20 minutes.
- Cut and shape strands, then rest for another 15 minutes.
- Braid and place in an oven at 35°C with 60-70% relative humidity for about 60 minutes.
- Bake without steam at 170 – 180°C for 30 - 35 minutes for 450 grams.
