This pan with a "lyonnaise" profile made of 2mm blue steel (14 gauge) provides very good heat distribution. It features high and curved walls that allow food to easily slide from the pan onto a plate or tray.

The iron surface is strong and free from coatings. The blue color of the pan is due to thermal treatment that provides temporary protection against oxidation and corrosion. It heats up quickly, offering excellent caramelization of juices.

The welded handle made of hardened steel strip ensures easy and ergonomic handling, with high temperature resistance. Suitable for all stovetops, including induction, as well as for oven use at moderate power.

Care: gently scrape and lightly oil with a brush. Store in a dry place. Do not use detergents.
