The vineyards of Pio Cesare have been producing exceptional wine since 1881. The tradition was started by Pio Cesare, who began purchasing select vineyards in the hills of Barolo and Barbaresco. His philosophy was that only from exceptional grapes can exceptional wine be produced, hence the quantity was reduced for the sake of quality.
Today, his grandson, Pio Boffa, is in charge, having established his grandfather's wines at a global level. The harvest ends around the first week of October and the grapes are gently pressed. Fermentation takes place at a controlled temperature which helps in the development of aromas and fruity characteristics.
The wines are bottled in the month of March.
