Manousakis Winery started in 1984, when the hills around the village of Vatolakkos were untouched. The winery's team of experts decided to plant the Syrah, Grenache, Mourvedre, and Roussanne varieties.

The winemaking takes place in stainless steel tanks with controlled temperature. Extraction lasts from 12 to 25 days. After the completion of the process, the wine is transferred to barrels of French and American oak for about 10 months.
The barrels are used for four years before being replaced.
