Destemming – crushing and extraction for 30 days. During fermentation, 2-3 pump-overs are performed per day. Alcoholic fermentation takes place at temperatures between 20 and 30°C and immediately after the end of extraction, the wine is directed for maturation in 300-liter French oak barrels (Alliers, Light Toasting - Medium Toasting), where it remains with the lees for at least two months with 3 battonages per week. Barrel maturation continues for another 16 months.
Deep-colored with purple highlights. On the nose, the typical aromas of the variety dominate, ideally combined with notes of leather, sweet spices, and coffee. On the palate, it is full-bodied, with rich tannins and a structure that promises long-term aging.
