The gastronomic tradition of a place is one of its most important cultural elements. Guided by this assumption, Theano Paschali and Zafeirios Tzakos, two individuals who have been involved with culture in Komotini for many years, collected and recorded 174 authentic recipes that cover the vast gastronomic mosaic of the area, as it has been shaped over the last hundred years by the cultural exchanges and influences it has received.

After meetings and gatherings with cultural organizations and representatives of many population groups living and working in the city of Komotini, they composed "Komotini on a Plate," an initiative that stems from a sense of protection, defense, and promotion of the city’s gastronomic tradition, from a sense of honor towards the ancestors, and from the desire to teach new generations about the old culinary practices and habits of their land.
