Fir honey is one of the rarest honeys in the world! It has a flavor reminiscent of vanilla and a pearly-caramel color, with a creamy texture. The bees produce it from honeydew secreted by the insect Physokermes Hemicryphus, found exclusively in the fir forests of the Peloponnese, particularly in Mainalo and Parnon. It is a honey that does not come out every year due to the many factors that must align. The extraction of the honey is extremely difficult and costly, as it requires the destruction of the combs. For these reasons, its production is very small and periodic over the years. It is one of the best categories of honey, rich in trace elements.
