    - pre heat the pan on high
    - throw a drop of water to see if it turns into a ball (like mercury)
    - if it evaporates, your pan is not hot enough
    - if it becomes a ball you are ready to cook
    - turn your heat to medium and add your oil
    - you can now add whatever food you are cooking

    the results are much tastier and healthier than non stick pans.
