I am not sure of the sherry you have from the description. Harveys Bristol Cream is a sweet sherry - not a dry white as described above. Yes you are right. With Sherry, you do not need to keep it in the fridge and there is no shelf life once it is open. If you have the sweet sherry then it is a really nice drink without ice - just as it is.
