Pine honey is not very sweet due to its low sugar concentration. Its aroma is unique. Pine honey produced in the fall is darker and less transparent than that produced in the spring.
Pine honey crystallizes relatively slowly, as its natural glucose content is low. Specifically, pure pine honeys remain liquid, meaning they do not crystallize, for more than a year and a half.
Pine honey is considered to be honey of high nutritional value, mainly due to the large number of different substances present in its composition. Among these substances, minerals and trace elements (calcium, magnesium, zinc, iron, copper, etc.) prevail, which are found in high concentrations in Greek pine honeys.
