Unlike Western stones, Japanese stones use water instead of oil to prevent the surface from clogging with metal particles.
Japanese water stones are softer than Western stones and have a comfortable feel in use because you can see and feel the stone cutting the surface and creating a continuous and sharp edge on the tool.
Because they are relatively softer, these stones may need to be resurfaced from time to time.
