Pedemontis cultivates directly 13 hectares of vineyards, immersed in the forests of Roero, a land with an ancient winemaking tradition and exceptional biodiversity. Its typical sandy soil produces wines with remarkable elegance and finesse, rich in aromas.
Local and traditional varieties are grown:
- Barbera and Nebbiolo for red wines.
- Arneis and Favorita for white wines.
The vineyards stretch across the valleys of Magliano Alfieri, Castellinaldo, Priocca, and Govone, in areas with steep and often abrupt slopes cut by rivers and small streams.
Nebbiolo: Indigenous variety of Piedmont, whose cultivation has been mentioned since 1268 and in Roero since 1303. The vineyard is located in the Alba area, covering 0.8 hectares at an altitude of 270 meters. The soil is limestone. Harvesting occurs in mid-October, with grapes collected by hand. After harvesting, extraction takes place under low pressure and fermentation in stainless steel tanks with indigenous yeasts. Alcoholic fermentation lasts 4 weeks in small tanks at controlled temperatures, followed by malolactic fermentation for 2 weeks and aging in oak barrels for 11 months.
