The distillery that produces the well-known in Lesvos Plomari Ouzo Yiannatsi started distilling ouzo in 1932. It is the youngest of the four distilleries that remain in Plomari. The family of Dimitrios Yiannatsis arrived in Plomari from Asia Minor with recipes from the East. They use the best ingredients to make their distillates, such as:
- High-quality grapes from Lesvos
- Anise from Lisvori
- Fennel and aromatic plants from the surrounding mountains
- Soft, smooth water from the Sedounas River
