Rose de Xinomavro 2013 is the new venture of Apostolos Thymiopoulos. It is a unique and distinctive rosé wine, as it was released 13 years after the harvest year. It is definitely worth trying a rosé wine of this aging as it is undoubtedly a unique experience.   • Technical characteristics: The grapes come from the mountainous Fyteia. Initially, the grapes were fermented with indigenous yeasts and then led to large and old oak barrels of 500lt where they remained for 4 years.
  • Tasting notes: It has a pale pink color with orange highlights. On the nose, beyond the dominance of tomato, sun-dried tomato, wild strawberry, and blackberries, it demonstrates interesting herbaceousness with aromas reminiscent of lavender, oregano, and thyme. Its long stay in the barrel resulted in the development of sweet spice aromas. On the palate, it has a crisp acidity, flavors of tomato, spices, and red fruits.
  • Pairing: Pairs well with pasta with red sauces, game with red sauces, oven-baked lamb or goat, sausages, mature cheeses, fatty red fish.
