The Santorini vineyard is ancient, with ancient varieties. It is characterized as a vineyard "three thousand years old," as it has been cultivated continuously until today. The vine and wine are at the core of the economic, social, and cultural life of the island. The vines are own-rooted, over fifty years old. Their renewal from antiquity is done using the "kataboladi" technique. That is, in the place of the dead vine, a branch from the neighboring vine is placed. The new vine is nourished by the "mother vine" for the first years and after 3-5 years, it is separated and forms its own roots.
