In ancient Greece, it was primarily used for making bread. It is a source of plant-based protein, has a high content of dietary fiber, and is rich in vitamin B6 and Niacin. It contains high levels of Magnesium, Phosphorus, and Copper. It is also a source of Iron and Zinc. By nature, it is gluten-free.
