The Assyrtiko comes from ancient 120-year-old vines from the best vineyard plots in the villages of Pyrgos, Exo Gonia, Fira, Akrotiri, and Megalochori. The wine matures for 9 months with its lees to gain richness, strong enough to balance its sharp acidity. 10% ages for 5 months in third-use oak barrels. Every element is very carefully studied to create an epic wine, worthy of the island's history and heritage.
