It applies modern organic farming techniques with the harvest starting strictly at the beginning of October. The pressing occurs on the same day within four hours of collection, using the cold extraction method to aim for maximum aroma yield from the fruits.

Its juice is rich in phenolic compounds with a strong fruity aroma, from green unripe fruits and berries, notes of freshly harvested unripe olives, tomato leaves, and flower blossoms.
