Traminer, a variety named after the Italian village of Termeno, in the southeastern part of South Tyrol. A white aromatic variety that thrives best in relatively cold areas.
The unique white PGI Metsovo in Greece comes from the vineyards of Giniotz and Agios Nikolaos on the slopes of Pindos, at an altitude of 900 meters.
The process includes:
- Pre-fermentation cold extraction using dry ice for complete exclusion of oxygen and temperatures close to 0˚C.
- Light pressing of the grape pulp in a pneumatic press.
- Strict clarification with the help of cooling.
- Inoculating the must with a selected yeast strain.
- Fermentation at very low temperatures to preserve the aromas.
- Keeping the new wine in contact with the lees to enrich with the autolysis components of the yeasts.
The result is the acquisition of greater aromatic complexity and mouthfeel.
