Xinomavro is a grape variety from Central and Western Macedonia, with its cultivation center in the Imathia Prefecture, specifically in the Naoussa wine-growing zone, from where it spread to the surrounding areas: 

Amyntaio, Goumenissa, Siatista, Velvento, and it reached as far as Rapsani, where it is referred to by the synonym Niaoustiano, indicating that in earlier times, cuttings brought from Naoussa were planted on the slopes of Lower Olympus.
In these main Xinomavro cultivation areas, I will refer to in the Fourth part of this book after describing, in the Second part, the variety as a plant, so that the qualitative differences presented by wines of the same type of this variety can be understood, as well as Xinomavro's ability to produce different types of wines, depending on the natural environment in which it bears fruit and the viticultural technique applied by the winemaker.
But what is the mark of Central and Western Macedonia on the Greek map? What historical memories does the land of the Macedonian kings bring to mind? What is the cultural heritage of modern Macedonian wine production? What is the evolution of viticulture and wine production in recent times?

To these questions, which naturally concern Xinomavro enthusiasts, as well as foreigners who want to get to know it in its place of origin, I will attempt to shed light in the First and Third parts, respectively, with brief references as much as possible.
