Tyrnavos, located at the foothills of Mount Olympus, is one of the key wine-producing regions of Greece and is part of the wine-growing zone PGI Tyrnavos. Domaine Zafeirakis focuses on sustainable farming practices to create wines with respect for people and the environment. The vineyard management is carefully designed aiming at minimal intervention and the preservation of biodiversity.
The cultivation has been organic since 2005 and is certified by Biohellas. Domaine Zafeirakis cultivates more than 120 acres of vineyards with indigenous varieties such as Limniona and Malagousia as well as international choices like Chardonnay and Syrah.
The production of white wines from Malagousia and Chardonnay includes:
- Cooling the harvested fruits for 24 hours at 4°C.
- Fermentation in stainless steel tanks and/or 1200L and 2400L barrels.
- Soaking with the lees for several months without the addition of yeasts.
- Aging in new and/or old 1200L and 2400L barrels.
For wines from the Limniona variety, the classical red winemaking method is applied:
- Use of Austrian, oak barrels of 3000L and 5000L without the use of yeasts.
- Extraction lasting 17-24 days.
- Malolactic fermentation in oak barrels of various sizes.
- Aging in new and old barrels and/or amphorae.
- Aging in the bottle for another 12 months after bottling.
