Kostis and Manolis Strataridakis, both agronomists, have undertaken their father's work with the aim of continuing tradition and innovation. Their winery, with its distinctive architecture, attests to the harmonious combination of traditional and modern techniques in wine production. Their vineyards are ideally located and take advantage of the region's favorable microclimate for grape production.
The harvest is done by hand and the improved processes allow the immediate transfer of the grapes to the winery, maintaining their integrity and form, elements that are crucial to the quality of the wine.
- Kostidis Soils: 50% Cabernet Sauvignon and 50% Kotsifali.
- Vinification: Classic red vinification with skin contact for ten days, fermentation at 24 to 28°C.
- Aging: 18 months in French and American oak barrels.
- Cellaring: Potential for further aging in the bottle for about 8 years.
