Red Dry Wine - Protected Designation of Origin Naoussa
Variety: Xinomavro
Region: Selected vineyard in the Rountina area of Naoussa. Vines approximately 30 years old with a yield of up to 900 kg per stremma. Sandy-clay soil with good drainage. The area's climate is continental with cold winters and fairly hot summers. The ripening of the grapes is aided by the cool summer nights due to winds coming from Mount Vermio.
Harvest: Late September.
Vinification: Pre-fermentation extraction at a temperature of 12 - 15°C for seven days. This is followed by fermentation for about twenty days at temperatures of 30 - 32°C. The new wine is transferred to 300 lt French oak barrels, type Nevers, for malolactic fermentation, where it remains on its lees for a period of two months. After the malolactic fermentation is complete, the wine is racked and continues to age for another ten months at least.
Characteristics: Bright ruby color with purple highlights. The nose reveals aromas of red fruits and spices, with hints of violet and licorice. Its tannins, which are immediately noticeable without being aggressive, its acidity, which maintains the freshness of its characteristics for years, and finally its complex structure, compose a fine wine with a long finish.
Pairs with: Enjoy with game, grilled and braised meats.
