Vegan pumpkin hummus
With less than 200 calories
If you love pumpkin and are wondering how else you can cook it, try making velvety pumpkin hummus! It is a nutritious meal with fewer than 200 calories / serving and ideal for a snack or a light vegan meal along with whole grain rusks and carrot sticks.
Steps
Preheat the oven to 180°C on fan mode.
Cut the pumpkin into small cubes and spread it on a baking tray lined with non-stick paper.
Add salt, pepper, 1 tbsp oil and bake for 40 minutes.
When we turn off the oven, let the pumpkin cool.
Then, in a blender place the roasted pumpkin, the chickpeas, the tahini, the remaining olive oil, the lemon juice and the spices.
Blend the mixture until it becomes creamy. (if needed, gradually add ½ cup water)
Serve in 4 bowls and add salt and pepper according to our preference.
Enjoy with rusks and carrot sticks.
