Pulled Chicken Sandwich Recipe!

…but you want something quick, easy, and at the same time nutritious and more!

This meal is a suggestion for making smart use of your Christmas leftovers.

It’s not just a sandwich, but a fully balanced meal that combines:

  • A very good source of lean quality protein, such as chicken and low-fat cheese, which will keep you feeling full for a long time. 
  • Carbohydrates, which will give you energy, through the toasted warm bread.
  • Dietary fiber from the mixed salad, cabbage - carrot, which will offer you, in addition to fiber, the extra nutrients of the vegetables and a feeling of fullness.

All of this will come together with a fresh, low-fat sauce that will give your meal the perfect flavor.

Regarding food waste and your favorite Christmas leftovers

…there’s no way you won’t have some chicken or turkey left over from your holiday meals.

So, take it out of the fridge, shred it, and follow the remaining steps I’ll tell you, to make this delicious sandwich. 

INGREDIENTS

For the chicken (For 1/2 breast) 

  • roasted chicken  
  • 1 tsp tomato paste
  • 1 tbsp soy sauce
  • 2 tsp honey
  • water
  • dry onion
  • garlic powder
  • paprika
  • a little balsamic vinegar
  • a little white wine
  • salt, pepper
  • olive oil

*If you’re concerned about your blood pressure, choose a salt with lower sodium such as this one!

For the salad

For assembling

  • toasted wholemeal bun
  • low-fat yellow cheese 

EXECUTION

For the chicken

  1. Shred the leftover chicken and set it aside until you use it.
  2. In a non-stick pan, add a little oil and sauté the finely chopped onion.
  3. Add a little water to soften it faster and let it caramelize a bit.
  4. Deglaze with white wine and let it evaporate.
  5. Add the remaining ingredients, the shredded chicken, and a little water and let them all bind together for a while (we want moisture). When it's ready, set it aside in a dish.

For the salad

  1. Grate cabbage and carrot, add the remaining ingredients and mix.

For the assembly

  1. Place a slice of cheese on your bread, let it toast and melt the cheese, in a non-stick pan, over medium to low heat, covered with a lid.
  2. When it's ready, open it, add the desired amount of chicken and salad, and voila!
